Rice Pilaf with Shallots and Parmesan

When I make dinner after work, it’s usually pretty simple. If I make rice, it’s almost always plain white or brown rice. Last weekend, I made this rice pilaf for a bit of a change. I must say, it was VERY tasty and almost as easy as plain rice. I ate two big helpings, and felt it was pretty much the perfect pregnancy food. I didn’t have shallots so used white onion instead, but I’m sure shallots would be even better.

Rice Pilaf with Shallots and Parmesan

2 teaspoons butter
2 tablespoons minced shallots
1 garlic clove, minced
1/2 cup basmati rice
1 cup fat-free, less-sodium chicken broth (I used vegetable broth)
1/4 cup dry white wine
2 tablespoons grated fresh Parmesan cheese
2 tablespoons minced fresh parsley
1/8 teaspoon freshly ground black pepper
Dash of sea salt

Melt butter in a small saucepan over medium-high heat. Add shallots and garlic; sauté 1 minute. Stir in rice; sauté 1 minute. Stir in broth and wine; bring to a boil. Cover, reduce heat, and simmer 15 minutes.
Remove from heat; stir in cheese, parsley, pepper, and salt.

The State of the Blog

G has been getting on my case big time about this blog. He’s right- I am seriously neglecting it. Well, I don’t have all that much to say. Haven’t been cooking much, haven’t been running much, etc, etc. Even still, the fact that 75% of the posts on my blog are by my husband is pretty pathetic. I’ll try harder.

I guess I could fill you in on the big news: I’m pregnant. 17 weeks tomorrow. Most of you probably know by now, but if not, now you do. I’ve been laying pretty low as a result. The first trimester, in particular, hit me rather hard. That seems to have mostly subsided, thank goodness. So I guess I can try for a few pregnancy updates. It was around this time that I first told you about Noodlehead (aka Lucy). I can’t promise the same number of belly shots- but I can tell you I’m definitely bigger this time around. Otherwise, I’m feeling as well as can be expected. Suffering from a variety of symptoms (sciatica, insomnia, fatigue and morning sickness to name a few) but I’ll try to keep those to myself. With any luck, I’ll be posting with a bit more regularity. Fingers are crossed!

The Blue House

Last night the 3 of use were sitting on the couch, looking at some pictures of houses. We had one of ours (blue) and a shot of a very similar house (but brown).

G says to Lucy: Which house is ours?

L: The blue house. (she points to it)

G: What about this one (pointing to the brown house)? Is this our house?

L: Nope.

G: How do you know?

L: Because it’s not blue!

She’s a genius, right?
